What I eat and cook in a day! All vegan + using mostly pantry and freezer ingredients. Social distancing is hard and this is a time of major anxiety for a lot of us. So in this video I talked about routines and soothing stress. I hope it’s helpful and if nothing else, I hope this video will be a bright spot in your day!
I also shared some recipes that are quarantine/self isolation friendly and highly adaptable. Best of all, I made my nut-free, no soak Vegan Alfredo pasta! It’s lemony and delicious and perfect for those of you who have a nut allergy because it’s made with hemp seeds!

  4. Thanks, Nicki, you are wonderful.
    I am home all the time with Stage 4 cancer in my bones, so I can't work. I am only 51 but my life at home has been going on for years. Now with everyone at home it is hard for me to say, "told ya!" However, I miss people coming over and going out to eat. Most of the places I frequent have take out, but when one does not drive, it is harder than eating there.
    I am curious how the world will be after all the questions are answered and the fear is less. What I see is:
    1. Business Owners figure out they can have people working at home, so they will let people decide to stay home or not, or tell people they will work from home and sell the building.
    1.a. for those empty buildings, make them into a homeless place for them to live
    2. All the internet providers need to improve infrastructure generally. We can control our networking in our homes, but outside needs to be updated greatly now. Glips in networking cause work to suffer, so there may be lawsuits regarding this too.
    I would appreciate if you, Nicki, or others, want to share how they see the world could be after this is over to help mitigate the anxiety.

  5. I decided to fully quarantine yesterday. I am considered essential personnel because I work for an animal shelter. However, my fiancé is a firefighter/EMT and in this current situation, it's arguably more important to make sure he stays healthy than myself right now, so I decided to ask my boss if I could quarantine until further notice to lower my fiancé's chances of becoming infected. Yesterday? Feeling really good, feeling secure about my choice and in a great mood. Today? I burst into tears because I couldn't solve a riddle and ended up spiraling into a sobbing tangent about how everyone in the entire world things I have a low IQ, lol. We all have our days.

  6. This is absolutely relatable. I have been trying to find a balance between having a routine and taking it easy and giving myself permission to not be hard on myself. I also have to acknowledge the fact that I am so grateful to be in a field that allows me to work from home and still get paid. Before all of this happened I had been desperately wanting out of my current field and was trying to think of ways to get out of it and look for alternatives. For whatever reason things did not work out and I stuck it out where I was. Now I am so grateful I didn’t leave when I wanted to and I know this was all for a reason.

  9. Okay sauce with cauliflower scares me now lol! I don't know what I did wrong but the last one I tried with cauliflower, it came out too thick. I suppose I had too much cauliflower in the sauce. Cant wait to try this though because all of your recipes are DELISH!

  10. Something I’ve really enjoyed it only cooking enough for that one meal because getting to cook a a whole new meal two ish times a day is something that’s really enjoyable for me. I’m like the opposite of too busy to cook at this current moment. Almost too bored not to lol
