I hope you are doing well, welcome back to my channel. I am so excited to share another video of my super easy and delicious veggie mid-week meals.

MY RECIPES:
– ONION FLATBREAD:
DOUGH:
2g yeast
125g flour
75ml water
Pinch of salt
TOPPING:
1 white onion
cooking oil
13g White sugar
13g Muscovado sugar
36ml Balsamic vinegar
13g Demerara sugar
Semolina
55g Mozzarella
12g Grated riserva
1 brush garlic butter (100g unsalted butter – 3 garlic cloves chopped)
– VEGGIE ENCHILADAS:
x3 Peppers (Mixed green, red & yellow)
x1/2 a red chilli
400g passata
x1tbsp tomato puree
x2tsp paprika
x1tsp chilli powder
x1 can of sweetcorn
x5 flour tortilla wraps
150g cheddar cheese
x2 sweet potatoes (cut into wedges)
100g aioli

  2. Love you cooking videos. You make everything look so easy which really helps for someone like me who hates to cook.

  3. Never heard of mushrooms in Chilli. I do like chocolate in Chilli traditional Mexican ingredient, but I use unprocessed cocoa powder, no sugar. I make my own Chilli seasoning so it is ready to go when needed. The pre-package stuff has loads of salts, preservatives & anti caking agents. You might want to add sweet corn to veggie chilli so delicious, rather than another kidney bean. Also mix lentils & sweet corn for another version of veggie Chilli.

  5. Hi Luke and Zara great vlog. I’m vegan but could adapt these easily. I add spinach to my chilli good way to get your greens in. The pie looked fab will make it with vegan cheese. Instead of an egg wash I use oat milk. Well done giving up meat. Dairy industry horrific so hope you both manage to transition to a vegan diet eventually. You should find it easy as your such a great cook luke. Zara that cake looked lush. Peace

    1.cheese and leek pie, looks yummy.
    2.Garlic flat bread, mmmmm.
    3. Pizza, double mmmmmm.
    I have to say though my ultimate fave was Sarah's cake…it looked divinely yummy, mmmmm.
    As a veggie of over 20 years, I've enjoyed seeing the recipes you have used.
    P.S. Coming from Liverpool, I always say tea…speaking of which, off to start cooking mine now…

    I'm useless in the kitchen, you made it all look so easy. Might have a go at the chilli dish. I love chilli and I'm vegetarian (18 years vegetarian)

  10. The recipes are amazing can not wait to try them. if you don't want to make the dough you can use bagels and cut the in half tomato puree and any fillings they are yummy.
