→Crispy Baked Chickpeas
3 cups chickpeas, rinsed (2 cans)
1 tablespoon olive oil
1 teaspoon salt

Soak soy curls in just-boiled water for 10 minutes. Drain, allow to cool slightly and then wring out as much extra liquid as possible using a nut milk bag or clean towel.

Combine all marinade ingredients and pour over soy curls. Toss to coat and allow to marinade for 2 hours minimum, giving it a stir once or twice to ensure it’s evenly coated.

Pan-fry marinated soy curls in a hot cast iron or nonstick skillet until slightly charred and enjoy.
