Hi, Life of a Vegetarian here 🙂
This is my first meal prepping video and I am so excited to share it with you. Although I don’t prepare food to last an entire week, I like spending a couple of hours on a Sunday getting myself organised for the week.
In this video I show you what a typical Sunday is like. Of course, each week changes depending on what food I have or what’s happening throughout the week. But I hope it gives you a little glimpse into my meal prepping routine.

Granola Recipe:

In a bowl combine:
1 cup oats, 1 cup slivered almonds, 1 cup buckinis, 1 cup quinoa puffs and 1 cup shredded coconut.
Add 1/2 cup tahini and 1/4 cup sweetener. Sometimes I use maple syrup or lately I’ve been using barley malt extract.
Toss until mixed and coated.
Bake at 160 degrees Celsius for 15 minutes.
Remove from oven, toss mixture.
Then I add about 1/2 – 3/4 cup inca berries or, you could use any type of dried fruit instead. Return to oven, bake another 20 minutes.
Allow to cool, then store in an airtight container.
Potato Salad Recipe:

To make:
Peel and cube 8 medium potatoes. Place in a saucepan of cold water and bring to the boil. Boil an additional 8 – 10 minutes or until potatoes are cooked through. Strain and place in fridge or allow to cool.
Combine cool potatoes with 6 spring onions (finely sliced), 1 cob of fresh corn (kernels removed from cob), a bunch of dill (stalks removed, roughly chopped) and a big handful of spinach (roughly cut).
To make dressing combine 1 cup soy mayonnaise, 1 tbsp apple cider vinegar, 2 tbsp fresh lemon juice, 1-2 tbsp Dijon mustard, salt and pepper.
Stir dressing through potato mixture and sprinkle with salad herbs.

▪️Salted Caramel Bliss Balls
Soak 10 medjool dates in boiling water for 10 minutes, drain. Process dates with 1 cup of cashews, 1 tbsp tahini, 2 tbsp cacao and a pinch of pink rock salt. Roll into balls and store in refrigerator.
