You can make this recipe with any veg you can get your hands on! Easy and delicious ital inspired curry with fried plantain, quinoa and salad! If you don’t like coconut milk or have it you can sub for an extra 1/2 of water with a nut butter (cashew/peanut/almond) for a richer taste. If you don’t have chopped tomatoes use 3/4 large tomatoes. If you don’t have quinoa use sub for rice/brown rice/couscous etc. Hope you enjoy!!

1 red chilli
1 red onion
3 green onions
1 thumb of fresh ginger
4 cloves of garlic
1 tsp dried thyme
2 1/2 tsp curry powder
1 x 400g coconut milk
1 x 400g chopped tomatoes
1/4 cup of water
1 vegan vegetable stock cube
Salt and black pepper to taste
1 x 400g black eyed beans
1/2 butternut squash
1 potato
1 sweet potato
2 carrots
1 courgette

  3. If I’m vegetarian and don’t have the coconut milk can I do regular?
    And what I do if I don’t have the seasonings and the ginger and the squash and Chile?

  4. This recipe had my whole house smelling heavenly. Used some thai red chili paste since I didn't have a fresh chili, and swapped some different veggies based on what I had in the fridge. Smashing the potatoes on the side of the pot to make the stew thicker is a great tip. Bomb dot com. Thanks so much for all your incredibly delicious recipes and fun videos!!!

  7. I'm just in the process of making this, its simmering in the pot now. Thanks for this recipe, I had everything in my cupboard except coconut milk, so used some whole peanut butter, and some green beans and a red pepper instead of squash. The peanut butter has given it such a rich nutty flavour, sooooo good!! Love your recipes and your videos, thankyou x

  8. tip: store tins of coconut milk upside down! tip 2: use cream coconut instead. more coco for your buck. But take care, I have snapped the tips of 2 knives trying to cut chunks off it. and take care, add it at the end, cos it tends to burn.

  11. in my ways of thinking, real vegans would adopt and not breed. most of us vegans and even non, are against breeding of cats and dogs etc, but why is it ok for humans to do so? loved your past content but i will have to be leaving now. take care.
