Thrifty Vegetarian Meals – Rice Au Gratin from My Mom's Recipe Binder

My awesome mom passed away from breast cancer in December. I found a binder brimming with recipes and am currently cooking one of her handwritten ones each week. This is rice au gratin! It was stupid delicious. So good that I used stupid as an adjective. Here’s the recipe in typed form…
Cook enough brown rice to make two cups’ worth. Sautee 1/2 cup of chopped celery, two tablespoons of chopped onions, and 1/2 cup of sliced mushrooms. Combine the cooked brown rice, the sauteed bits, 1/2 pound of shredded cheddar, and 1/4 cup of chopped parsley. Mix that up and add it to a buttered baking pan. Cook at 300 degrees for 25 to 30 minutes.
