Thrifty Vegetarian Meals – Herbed Rice Soup From My Mom's Recipe Binder

My mom passed away from breast cancer in December. She had this binder overflowing with random recipes. I’ve been making one a week. This one is herbed rice soup.
Bring three cups of veggie stock to a boil. Add a mixture of two tablespoons of flour, 1/2 teaspoon of salt, three tablespoons of nutritional yeast, and 1/4 cup of milk powder. Once mixed, add 1/2 cup of uncooked brown rice. Cover and simmer for about 40 or 45 minutes. You can test the consistency of the rice. I said 30 minutes in the video because the cooking method wasn’t the same. Once the rice is sufficiently mushy, add 1.5 teaspoons of oregano, one teaspoon of basil, 1/2 cup of milk, two teaspoons of olive oil, one tablespoon of lemon juice, and one cup of black beans. Heat thoroughly and serve!
