► BLENDER BANANA BREAD:
Ingredients
2 ½ cups old-fashioned rolled oats
3 ripe bananas medium-sized
¼ cup maple syrup
2 large eggs
1 tsp baking soda
1 tsp cinnamon
¼ tsp salt
Procedure
Preheat oven to 375°F (190°C).
Line a loaf pan with foil and spray.
Blend all ingredients (besides optional toppings) in a blender or food processor.
Pour into loaf pan. Add optional toppings if desired.
Bake for about 40 minutes, until a toothpick comes out clean.
Allow loaf to cool completely before removing from the pan.
Once completely cooled, store in an airtight container, or freeze.
Yields 8 slices.
Per 1 slice:

► LENTIL STEW:
Ingredients
1 Tbsp oil
1 cup onion, chopped
2 garlic cloves minced
1 pound lentils uncooked
1 can (28 oz) crushed tomatoes
4 cups water
salt & pepper, to taste
Procedure
In a large saucepan, sauté onions and garlic in oil for about 5 minutes, until tender.
Add lentils, tomatoes, and water to the pot. Bring to a boil, bring the heat down to low, cover, and simmer for around 30 minutes, until all the liquid is absorbed. Stir occasionally to make sure they aren’t sticking to the bottom.
Season to taste with salt and pepper. Enjoy!
Yields ~8 cups of stew (5 servings).
Per serving of 1 ½ cups:

  4. Hi, love the ideas but I would have to adapt some of the meal recipes. I do not like sweet potatoes at all, any other quiche base you can think of? Also, I assume you could replace the goats cheese with another cheese?

  10. TJ’s maple syrup is the real thing, which is great, but also expensive. On a tight budget, I’d skip buying the maple syrup to buy more beans, fruit, and a spice or two. Maybe more veggies too. Just thinking how to get more good food for the same amount of money.
