I’ve been going through my mom’s recipe binder since she passed away a few months ago. To feel closer to her, I’ve been making a few of them. This is tomato and broccoli pasta. Here’s the recipe!
Boil a box of pasta according to package directions. When there are about five minutes of boiling left, add a cup or a cup and a half of broccoli. While that’s going on, marinate a cup and a half of cherry/grape tomatoes with 1/4 cup of extra virgin olive oil and two minced garlic cloves. After the pasta and broccoli have been cooked, drain them and return them to the pot. Add the tomatoes and most of the olive oil they’ve been marinating in. Mix together well. Finally, add one to two cups of mozzarella cheese. Blend until the cheese has melted. Enjoy! You can also add a bit of basil, if desired.
