  6. Hey caitlin….. I just finished a 30 day vegan challenge. As a chef it was easier than I thought. My go to has been an Avocado Toast Combination before I saw yours. I do the avocado smear with red onions with my chili/ lime seasoning and campfire smokey sea salt by FRESHJAX… I loved your big 5 go to's. I'll be making all 5 !!! thanx again….. rory

  7. My concern about vegan and vegetarian diets are the amount of carbs. How do you balance that? (As you get older cholesterol gets to be a subject and that is elevated by carbs and not fat as we are led to believe.) I would love to be vegan/vegetarian since I have a problem with eating animal protein ever since I had cancer. (I feel what happened to me was so violent. I feel I am more sensitive than I ever was before cancer and I was really sensitive.) But, I then find myself eating more carbs and then my cholesterol gets high.
